Ingredients

2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1.5 cups granulated sugar

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

2 eggs

1 cup milk (or dairy-free)

1/2 cup melted butter or oil

2 tsp vanilla extract

1 can (14 oz) sweetened condensed milk

2.5 cups sweetened shredded coconut

1 cup mini marshmallows

1/2 cup butter (for icing)

2 cups powdered sugar

1/3 cup cocoa powder

3 tbsp milk

1 tsp vanilla

OR 1/2 cup heavy cream + 4 oz chocolate for ganache

Instructions

1. Preheat oven to 350°F. Grease and flour two 9-inch round pans.

2. In a large bowl, mix flour, cocoa, sugar, baking powder, baking soda, and salt.

3. Add eggs, milk, melted butter, and vanilla. Beat until smooth. Pour into pans.

4. Bake for 25-30 minutes. Cool completely on wire racks.

5. In a saucepan, heat condensed milk and salt. Stir in coconut, vanilla, and marshmallows until melted. Cool slightly.

6. Spread half of the filling over first cake layer. Add second layer. Chill for 1 hour.

7. Prepare icing or ganache. Pour over chilled cake. Smooth top and let set.

8. Slice and serve.

Notes

You can make this recipe vegan by using flax eggs and coconut cream.

Chill the cake before icing to ensure clean slices.
